RESIPI Laksa Sarawak dari Vietnam.

Hi Su!! :-) I hope this directions on the preparation of laksa is easy to understand. Have fun and enjoy yah... let me know how your Laksa Party turn out yah. YUMMMMMYYYY! I missed it already... will go back KL to cook for my mum and friends!!

Preparation for soup base:
- Remove chicken skin and boil half a chicken for the soup base. Shred the chicken meat from it and keep it aside for garnishing later.
- Then later add in the Laksa paste n let it boil further, till the aroma is out.
- Sift it and try to scoop out excessive of oil floating on the top before putting in coconut milk. (Extract from 1 or 1½ coconut)
- Let it to boil & add salt to taste.

Preparation of noodles:
- Buy those thick ‘Mee Hoon’ or fresh laksa noodles or use spaghetti. I bought those thick rice noodle sticks made from Vietnam in Tesco. If you using the thick rice noodles, soak them in cold water first before boiling them. I add in a bit of salt and oil so its slightly salty and doesn’t stick together after cooling.
Garnishing for noodles:
- Make a few omellets, cut them into strips like - Pre cook some medium size prawns
- Shredded chicken meat from the boiled chicken used for soup
- Chopped coriander leaves (daun ketumbar) (lots of it!)
- Pre cook some bean sprout/ 'taugeh' (quickly take out from hot water so it maintain crispy)
- Limau kasturi, cut half
- Sliced some red chilies
- Sambal udang kering (if u have any!!)

Note:
You can prepare all the Laksa garnishing earlier and leave them aside when you
are boiling the chicken soup.

Put all those garnishing in separate small containers so your guests can help
themselves to it and put into their own bowl.

So now you can place some cooked noodles/spaghetti inside your bowl, scope in the
warm laksa gravy and garnish with the rest of the other stuffs on it. Then you kacau all
of it and YUUUUUUUMMMMMMYYYYY!!!! Sedapnya!!!!
